Indonesian Beef Ribs Soup (Sup Iga Sapi) Recipe

Ingredients:

  • 1/2 kg beef ribs (Iga sapi)
  • 100 grams green beans (buncis), cut into pieces
  • 100 grams carrots, sliced
  • 1 piece of chayote (labu siam), peeled and cut into chunks
  • 10 shallots (bawang merah), peeled
  • 10 cloves garlic (bawang putih), peeled
  • 1 stalk lemongrass (sereh), bruised
  • 2 stalks green onions (daun bawang)
  • 2 stalks celery (daun seledri)
  • 2 tomatoes, quartered
  • 2 cloves (cengkeh)
  • 2 star anise (bunga lawang)
  • 1 nutmeg (pala)
  • Salt (garam), to taste
  • Pepper (merica), to taste
  • Sugar (gula pasir), to taste
  • Cooking oil (minyak), for sautéing
  • Water (air), as needed

Instructions:

  1. Prepare the Beef Ribs:

    • In a large pot, bring water to a boil and add the beef ribs. Cook until the ribs are tender, which should take approximately 60 minutes. Season with salt and pepper. Add the bruised lemongrass to infuse the broth with its aromatic flavor.
  2. Prepare the Vegetables and Aromatics:

    • While the beef is cooking, prepare the vegetables. Cut the carrots, green beans, and chayote into bite-sized pieces and rinse them thoroughly.
    • Peel the shallots and garlic. Divide them into two portions: seven shallots and cloves of garlic for grinding, and the remaining ones for frying.
    • Slice one stalk of green onion lengthwise and chop the other stalk into thin rings. Separate the celery stalks from the leaves. Cut the tomatoes into quarters.
  3. Sauté Aromatics:

    • In a small pan, heat a bit of oil and fry the remaining shallots and garlic until fragrant. This step enhances the flavor of the soup, adding a deeper richness.
  4. Combine Ingredients:

    • Once the beef ribs are tender and the broth has reduced by half, add the ground shallots and garlic, cloves, nutmeg, star anise, sliced green onions, and celery stalks. Pour in 100 ml of water. Allow the mixture to come to a boil.
  5. Add Vegetables:

    • Add the prepared carrots, green beans, and chayote to the pot. Continue to cook until the vegetables reach your desired level of tenderness.
  6. Finish the Soup:

    • Add the sliced green onion tops, celery leaves, and quartered tomatoes. Cook for a few more minutes, then adjust the seasoning with additional salt, pepper, and a touch of sugar to balance the flavors.
  7. Final Touches:

    • Stir in the fried shallots and garlic for an extra layer of flavor. Once the soup is well-seasoned and all ingredients are cooked to your liking, remove from heat.
  8. Serve:

    • Ladle the soup into bowls and serve hot with a side of steamed white rice.
