Soto Daging Sapi with Daikon and Carrots
Ingredients:
- 250 grams beef, cut into cubes
- 2 carrots, peeled and thinly sliced into rounds
- 2 daikon radishes, peeled and thinly sliced into rounds
- 1 stalk lemongrass, bruised
- 1 stalk green onion, finely sliced
- 1 stalk celery, finely sliced
- Salt, to taste
- Sugar, to taste
- 1500 ml water
- 1 teaspoon fried shallots
- 2 tablespoons vegetable oil
For the Spice Paste:
- 5 shallots
- 3 garlic cloves
- 1/2 teaspoon whole black peppercorns

Prepare the Beef:
- Bring the water to a boil in a large pot. Add the beef, which has been thoroughly washed, and simmer until tender. Once cooked, remove the beef from the pot, drain, and cut it into bite-sized cubes. Set aside.
- Strain the beef broth and reserve for further use. This will ensure a clear and flavorful broth.

Cook the Daikon:
- Use half of the strained beef broth to cook the daikon radishes. This step helps in balancing the daikon’s strong flavor, making it more palatable.

Prepare the Spice Paste:
- In a food processor, blend the shallots, garlic, and black peppercorns into a smooth paste.

Cook the Soup:
- Heat the vegetable oil in a pan over medium heat. Add the spice paste and sauté until fragrant and golden.
- Pour the remaining beef broth into the pan and bring it to a boil. Add the lemongrass, carrots, beef, and daikon radishes.
- Season with salt and sugar to taste. Add the green onions and celery. Adjust the seasoning if needed.
