Ingredients:

  • 3 potatoes
  • 1 cup red lentils
  • 40g butter
  • 2 onions
  • 2 cloves garlic
  • 1/2 red capsicum (bell pepper)
  • 1 cup green beans
  • 1 1/4 cups milk
  • 8 tbsp pasta sauce
  • Pepper, to taste
  • Fresh parsley, chopped

Instructions:

  1. Preheat oven to 180ยฐC (350ยฐF).
  2. Peel potatoes and cut them into chunks.
  3. Boil the potato chunks in a pot of water until just tender. Drain and keep warm in the pan.
  4. Wash lentils in cold water and drain. Place in a pan, cover with cold water, and bring to a boil. Cover and simmer for about 20 minutes or until tender. Drain.
  5. In a fry pan, heat half of the butter. Add chopped onions and minced garlic, and stir-fry over low heat for five minutes. Then add diced capsicum and green beans, and cook for an additional 2 minutes.
  6. Add pasta sauce to the pan and bring to a boil, stirring well.
  7. Pour the vegetable mixture into a shallow rectangular baking dish.
  8. Mash the cooked potatoes in the pan while still warm. Add milk and the remaining butter, and mix until smooth.
  9. Add cooked lentils, pepper, and chopped parsley to the mashed potatoes, and mix well.
  10. Spread the potato mixture evenly over the vegetable layer in the baking dish.
  11. Bake in the preheated oven for 25 minutes, or until the pie is golden brown on top.
