Ingredients:
- 3 potatoes
- 1 cup red lentils
- 40g butter
- 2 onions
- 2 cloves garlic
- 1/2 red capsicum (bell pepper)
- 1 cup green beans
- 1 1/4 cups milk
- 8 tbsp pasta sauce
- Pepper, to taste
- Fresh parsley, chopped

Instructions:
- Preheat oven to 180ยฐC (350ยฐF).
- Peel potatoes and cut them into chunks.
- Boil the potato chunks in a pot of water until just tender. Drain and keep warm in the pan.
- Wash lentils in cold water and drain. Place in a pan, cover with cold water, and bring to a boil. Cover and simmer for about 20 minutes or until tender. Drain.
- In a fry pan, heat half of the butter. Add chopped onions and minced garlic, and stir-fry over low heat for five minutes. Then add diced capsicum and green beans, and cook for an additional 2 minutes.
- Add pasta sauce to the pan and bring to a boil, stirring well.
- Pour the vegetable mixture into a shallow rectangular baking dish.
- Mash the cooked potatoes in the pan while still warm. Add milk and the remaining butter, and mix until smooth.
- Add cooked lentils, pepper, and chopped parsley to the mashed potatoes, and mix well.
- Spread the potato mixture evenly over the vegetable layer in the baking dish.
- Bake in the preheated oven for 25 minutes, or until the pie is golden brown on top.
