Description:

This delightful No Bake Cheesecake recipe is a treasured family creation that has evolved over time, originating from a MilNot can. It began with my mother, who thoughtfully modified it to suit her dietary needs as a diabetic by omitting sugar altogether, a change that went unnoticed by anyone tasting the dessert. Now, this recipe is lovingly passed down to my granddaughter, who has been crafting it since she was just six years old, making it a true legacy of sweet indulgence. If you find yourself without a pie shell, this cheesecake is an excellent alternative that doesn’t compromise on flavor. Additionally, if you prefer a fluffier texture, simply opt for a larger bowl of whipped topping for an extra pie, ensuring a delightful and satisfying dessert experience.

Instructions

  1. Begin by dissolving the Jello and sugar in the boiling water (or juice). Stir until fully combined to create a smooth mixture.

  2. Next, add the cream cheese to the mixture, using a mixer to beat it until well blended and creamy, ensuring there are no lumps.

  3. Allow the mixture to cool until it begins to set but is still relatively soft. This step is crucial for achieving the perfect texture in the cheesecake.

  4. Once cooled, gently fold in the crushed pineapple. If you prefer a smoother consistency, you can use the mixer here as well; however, if you want to keep the mandarin oranges whole for a pop of color and texture, it’s best to skip the mixer at this stage.

  5. Add the mandarin oranges to the mixture and carefully combine, making sure not to break them apart if you wish to retain their shape.

  6. Next, fold in the Cool Whip gently. For a fluffier consistency, you can use the mixer, but be cautious not to over-mix to maintain the light and airy texture of the cheesecake.

  7. Pour the cheesecake filling into the prepared graham cracker crusts, smoothing the tops with a spatula to ensure an even surface.

  8. Finally, chill the cheesecakes in the refrigerator for at least 2 hours or until set. Once ready, slice and serve, and enjoy every delicious bite. Remember to indulge in a piece for me!

This No Bake Cheesecake is not only a delightful treat but also a celebration of family traditions and cherished memories. Whether you serve it at a gathering or enjoy it at home, its creamy texture and fruity flavor are sure to impress your guests and loved ones alike. Enjoy this sweet treat, and don’t hesitate to make it your own!
