Instructions

  1. Prepare the Vegetables:
    Begin by preparing the vegetables that will be used as the stuffing for the trout. Peel the carrots and cut them in half, then slice each half into thin strips. Next, wash and trim the fresh spring onions, discarding the roots, and slice them into thin matchsticks. Peel the potatoes and slice them into thin rounds. Lastly, drain the sun-dried tomatoes and slice them into thin strips.

  2. Season the Vegetables:
    In a bowl, combine the sliced carrots, potatoes, and spring onions. Add a peeled garlic clove and season with salt and black pepper to taste. Stir in the sun-dried tomatoes and mix everything together. Let the vegetables rest for a few minutes to allow the flavors to meld.

  3. Prepare the Trout:
    Rinse the cleaned trout under cold water and pat dry with paper towels. Lay a sheet of parchment paper on a flat surface, and place the trout on it. Carefully stuff the trout with the vegetable mixture using a spoon, ensuring the cavity is filled.

  4. Wrap the Trout:
    Once the trout is stuffed, carefully fold the parchment paper around the fish, creating a packet. Place this parchment-wrapped fish on a piece of aluminum foil. Drizzle the trout with extra virgin olive oil and seal the foil packet tightly, ensuring that both the parchment paper and aluminum foil are securely closed at the ends.

  5. Bake the Trout:
    Place the sealed foil packets onto a baking tray and bake in a preheated oven at 180°C (350°F) for about 25-30 minutes, or until the trout is cooked through and the vegetables are tender.
