Ingredients:

  • 6 eggs
  • 3/4 cup sugar
  • 2 1/2 teaspoons vanilla extract
  • 1 tablespoon water
  • 1 1/2 cups cake flour
  • 3/4 teaspoon cream of tartar
  • 1 cup powdered sugar (for dusting)

Instructions:

1. Preheat oven to 400 degrees F (200 degrees C).
2. Line two baking sheets with parchment or wax paper.
3. In a mixing bowl, beat the egg yolks and 1/2 cup of sugar on high speed for about 5 minutes, or until the mixture forms ribbons as it falls from the beater.
4. Reduce the mixer speed and beat in the vanilla extract and water until well combined.
5. Increase the mixer speed and beat for an additional 30 seconds to thicken the mixture slightly.
6. Sift the cake flour over the egg yolk mixture and set aside without mixing.
7. In another clean mixing bowl, beat the egg whites until foamy, then add the cream of tartar.
8. Continue beating the egg whites until soft peaks form. Gradually beat in the remaining 1/4 cup of sugar until stiff peaks form.
9. Add 1/3 of the beaten egg whites to the egg yolk mixture and gently fold until all the flour is incorporated.
10. Carefully fold in the remaining beaten egg whites until well combined, ensuring not to deflate the mixture.
11. Working quickly, transfer 4 cups of the batter into a large pastry bag fitted with a 3/4-inch tip.
12. Pipe the batter into 3-inch by 1 1/2-inch ‘fingers’ onto the prepared baking sheets, leaving about 1/4 inch of space between each finger.
13. The fingers will slightly attach to each other during baking. Ensure the batter falls naturally from the tip without pressing onto the sheet.
14. For a cheesecake crust, pipe a spiral shape, ending at about 10 inches in diameter.
15. Dust the piped batter with powdered sugar, as it will absorb some during baking.
16. Bake in the preheated oven for 8 to 10 minutes, or until the lady fingers are springy to the touch.
17. Remove from the oven and transfer the lady fingers to wire racks to cool slightly.
18. While still warm, carefully remove the lady fingers from the parchment paper using a long spatula. Alternatively, invert the disc onto a towel-covered rack and then reinvert it onto a plain rack.
