Homemade Sweet Dried Beef Jerky (Dendeng Daging Sapi Kering Manis Rumahan)

  1. Prepare the Beef:

    • Rinse the beef thoroughly, then slice it thinly. Lightly coat the slices with salt.
  2. Prepare the Marinade:

    • Blend or grind the garlic, ginger, and galangal into a smooth paste.
  3. Cook the Beef:

    • In a small pot or pan, combine the beef slices with the blended spices, kaffir lime leaves, palm sugar (previously ground), granulated sugar, a pinch of salt, black pepper, nutmeg, coriander, and beef seasoning. Add just enough water to cover the beef.
    • Bring to a boil, then simmer until the water evaporates completely, allowing the spices to thoroughly infuse the beef. This should be done over low heat to ensure the flavors meld and the beef becomes tender.
  4. Cool and Flatten:

    • Once the mixture has boiled down and the beef is well-coated with the spices, taste and adjust the seasoning if necessary. Let the beef cool to room temperature.
    • Once cooled, use a meat mallet or a similar tool to pound the beef until it is flat and slightly expanded to your desired shape.
  5. Marinate and Dry:

    • Coat the flattened beef with ground coriander. If you prefer a sweeter jerky, you may add extra ground palm sugar or granulated sugar at this stage. For a less sweet version, just stick with the ground coriander.
    • Allow the beef to marinate for 3-4 hours. For the best results, sun-dry the beef to ensure it becomes completely dry.
  6. Fry the Jerky:

    • Heat oil in a pan. Fry the beef slices in hot oil until they are crispy and dry. Avoid flipping them too soon; let each side become crisp before turning. Continue frying until all slices are cooked.
    • Drain excess oil and, if desired, sprinkle with sesame seeds.
  7. Serve:

    • Your homemade sweet dried beef jerky is now ready to be served. Enjoy as a delicious and savory snack!
