Iga Sapi & Ayam Bakar Madu: A Delightful Indonesian Grilled Beef and Chicken Dish

This Indonesian recipe for Iga Sapi & Ayam Bakar Madu, or Grilled Beef Ribs and Honey Chicken, combines succulent beef ribs and juicy chicken with a rich honey glaze. The result is a flavorful, slightly sweet, and aromatic dish perfect for any special occasion or a casual dinner.

Ingredients

For the Main Ingredients:

  • 1/2 kg beef ribs (iga sapi)
  • 1/2 chicken (thighs, cut into 4 pieces)

For the Marinade and Glaze:

  • 1 sachet honey (preferably Madurasa)
  • Sweet soy sauce (kecap manis)
  • 2 tablespoons margarine
  • 1/2 tablespoon coriander seeds (ketumbar)
  • 2 shallots (bawang merah)
  • 3 cloves garlic (bawang putih)
  • 1/2 small onion (bawang bombay)
  • 1/2 nutmeg (biji pala)
  • 1 cm ginger (jahe)
  • 1 bay leaf (daun salam)
  • 2 kaffir lime leaves (daun jeruk)
  • Salt to taste
  • 1 packet ground pepper (lada bubuk)

For the Basting Sauce:

  • 3 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons honey
  • 3 tablespoons cooking oil (minyak goreng)

Instructions

  1. Prepare the Ingredients:

    • Clean the beef ribs and chicken thoroughly.
    • Boil the beef ribs in a regular pot briefly to remove impurities and blood. Then, pressure cook the beef ribs for 15 minutes. (Note: The chicken does not need to be pressure cooked as it would fall apart.)
  2. Make the Spice Paste:

    • Grind the coriander seeds, shallots, garlic, nutmeg, and ginger into a smooth paste.
  3. Cook the Spice Paste:

    • Slice the small onion and set aside.
    • In a pan, heat the margarine and sauté the spice paste along with the sliced onion, bay leaves, and kaffir lime leaves until aromatic.
  4. Combine and Simmer:

    • Once the beef ribs are pressure-cooked, let the pressure release before opening the lid.
    • Add approximately 500 ml of beef stock to the sautéed spices.
    • Adjust the seasoning with salt and pepper to taste.
    • First, add the chicken pieces and simmer until they are partially tender. This step ensures the beef ribs stay on the bone during grilling.
  5. Add the Honey and Soy Sauce:

    • Stir in 2 tablespoons of honey and sweet soy sauce to taste.
    • Add the beef ribs to the pot and continue to simmer.
  6. Reduce the Liquid:

    • Continue cooking, stirring occasionally, until the liquid reduces and thickens.
  7. Prepare the Basting Sauce:

    • Mix together 3 tablespoons of sweet soy sauce, 2 tablespoons of honey, and 3 tablespoons of cooking oil.
  8. Grill the Meat:

    • Once the liquid has thickened, transfer the beef ribs and chicken to a different container and brush them with the basting sauce.
    • Preheat your grill or oven.
    • Place the marinated beef ribs and chicken on the grill, turning occasionally to ensure even cooking and to prevent burning.
    • Grill to your desired level of doneness.
  9. Serve:

    • Once grilled to perfection, remove the meat from the grill and serve hot.
