Sapi Cah Paprika: A Flavorful Indonesian Beef Stir-Fry

Ingredients:

  • 400 grams of tender beef (sirloin or similar cut)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 large onion
  • 3 cm fresh ginger
  • 3 cloves garlic
  • 3 fresh chilies (adjust to taste)
  • 3 tablespoons tapioca flour (or cornstarch)
  • 3 tablespoons oyster sauce (Lee Kum Kee or similar)
  • 2 tablespoons soy sauce
  • 3 tablespoons sweet soy sauce (kecap manis)
  • A pinch of salt
  • 1 cup water

Instructions:

  1. Prepare the Beef:

    • Slice the beef thinly against the grain for tender pieces. In a mixing bowl, marinate the beef with oyster sauce, sweet soy sauce, and soy sauce. Mix thoroughly to coat the beef evenly.
    • Sprinkle the tapioca flour over the beef and mix again, ensuring each piece is well-coated. Cover the bowl and refrigerate for at least 2 hours to let the flavors meld.
  2. Prepare the Vegetables:

    • Dice the red and green bell peppers and slice the onion.
    • Thinly slice the ginger, garlic, and fresh chilies.
  3. Cook the Vegetables:

    • Heat a little oil in a large skillet or wok over medium heat. Add the garlic and ginger and sauté until fragrant.
    • Add the sliced chilies, bell peppers, and onion. Stir-fry until the vegetables are slightly tender but still crisp. Remove from the skillet and set aside.
  4. Cook the Beef:

    • In the same skillet, add a bit more oil if needed. Add the marinated beef and stir-fry until it starts to brown.
    • Pour in the cup of water and cook, stirring occasionally, until the sauce thickens and the beef becomes tender.
  5. Combine and Finish:

    • Return the cooked vegetables to the skillet with the beef. Stir well to combine all ingredients.
    • Taste and adjust seasoning with a pinch of salt if necessary. Cook for a few more minutes to allow the flavors to meld.
  6. Serve:
