Daging Lapis Telur: A Flavorful Indonesian Beef and Egg Dish

Ingredients:

  • 1/2 pound thinly sliced beef
  • 1 egg, beaten
  • 1 thumb-sized piece of galangal, crushed
  • 1 stalk lemongrass, crushed
  • 5 tablespoons sweet soy sauce (kecap manis)
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 1 liter hot water

For the Spice Paste:

  • 8 shallots
  • 4 cloves garlic
  • 4 roasted candlenuts
  • 1 tablespoon ground coriander
  • 1/2 tablespoon ground black pepper
  • 4 red curly chilies
  • Salt to taste

Instructions:

  1. Prepare the Spice Paste: Blend the shallots, garlic, roasted candlenuts, ground coriander, ground black pepper, red chilies, and a pinch of salt into a smooth paste. Set aside.

  2. Marinate the Beef: In a large bowl, combine the thinly sliced beef with the prepared spice paste and the beaten egg. Mix well and let it marinate for a few minutes to absorb the flavors.

  3. Cook the Beef: Heat a small amount of oil in a skillet over medium heat. Add the marinated beef along with the spice paste. Sauté until the beef changes color and is lightly browned.

  4. Add Aromatics and Simmer: Add the crushed galangal, crushed lemongrass, bay leaves, and kaffir lime leaves to the skillet. Pour in the hot water and stir to combine.

  5. Simmer the Dish: Allow the mixture to simmer gently until the beef is tender and the sauce has thickened. If the beef is not tender yet, add more hot water as needed and continue to simmer until it reaches the desired tenderness.

  6. Adjust Seasoning: Taste and adjust the seasoning if necessary, adding more salt or sweet soy sauce to suit your preference.

  7. Serve: Once the beef is tender and the sauce has reduced to a rich, flavorful consistency, remove from heat. Serve hot with steamed rice or as a side dish.

Enjoy this savory and aromatic Daging Lapis Telur, a delightful Indonesian dish that perfectly combines tender beef with a rich and fragrant sauce.
