Indonesian Beef Foot Soup (Sop Kaki Sapi)

Ingredients

  • 2 Beef Feet (cleaned and trimmed of any hair, cut into pieces)
  • Spices:
    • 6 stalks of green onion leaves
    • 1 green apple tomato
    • 5 cloves of red onions
    • 3 cloves of garlic
    • 3 stalks of celery
    • 1/2 teaspoon ground black pepper
    • 1/4 teaspoon ground nutmeg
    • Seasoning (to taste)
    • 1/8 teaspoon granulated sugar
    • Salt (to taste)
    • Cooking oil (for frying)

Instructions

  1. Prepare the Beef Feet:

    • Boil the cleaned beef feet in a pot of water for about 1 hour, or until tender. Once done, remove from the pot and set aside.
  2. Prepare the Spices:

    • Slice the red onions and garlic. Dice the celery and green apple tomato.
    • Heat oil in a pan and fry the sliced red onions and garlic until golden brown. Remove and set aside for garnish.
  3. Make the Soup:

    • In the same pot used to boil the beef feet, bring 300 ml of water to a boil. Add the beef feet and any remaining broth from the initial boiling.
    • Add the ground black pepper, ground nutmeg, seasoning, granulated sugar, and salt to the pot. Allow the soup to simmer for approximately 30 minutes, or until all the flavors meld together.
  4. Finish and Serve:

    • Remove the pot from heat and transfer the soup to a large serving bowl.
    • Garnish with sliced green onion leaves, celery, and the fried red onions and garlic. Top with diced green apple tomato.
    • Serve hot, and for an extra kick, accompany with sliced fresh chili peppers.
