Indonesian Meatball Soup (Sop Daging Bakso Sapi) – Eggless Version
Ingredients:
For the Meatballs:
- 1/4 kg beef (divided into two portions, half for the meatballs)
- 2 tablespoons tapioca flour (aci)
- 1/2 teaspoon all-purpose flour
- A pinch of black pepper
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 clove garlic, thinly sliced and fried
- 1 small red onion, thinly sliced and fried
- 1/2 packet of beef-flavored seasoning (Royco)
- 50 ml chilled water
For the Soup:
- 2 carrots, peeled and sliced
- 5 green beans, trimmed and cut
- Shredded cabbage, as needed
- 1 stalk green onion, chopped
- 1 stalk celery, chopped
- 2 shallots, sliced
- Ground spices:
- 2 cloves garlic
- A small piece of nutmeg (to taste)
- Royco seasoning (as needed)
- White sugar

Prepare the Meatballs:
- Cut the beef into small pieces and freeze for about an hour.
- After freezing, blend the beef with garlic and fried red onions until smooth.
- In a mixing bowl, combine tapioca flour, all-purpose flour, black pepper, Royco seasoning, baking powder, and baking soda.
- Add the blended beef mixture to the bowl and mix well.
- Bring a pot of water to a boil and turn off the heat.
- Form meatballs by hand, using a spoon to help shape them, and carefully drop them into the hot water.
- Cook the meatballs until they float to the surface. Turn off the heat and let them sit for 5 minutes.
- Transfer the cooked meatballs to a bowl of cold water to cool.

Prepare the Soup:
- In a pot, simmer the remaining beef (not used for the meatballs) until tender.
- Add carrots, green beans, cabbage, and chopped green onion and celery to the pot.
- When the vegetables are nearly cooked, remove from heat.
- In a separate pan, sauté the ground spices until fragrant and add them to the soup pot.
- Season with white sugar and Royco seasoning to taste.
- Add the meatballs to the soup and adjust the seasoning as needed.

Serve:
- Ladle the soup into bowls and serve hot.
