Savory Indonesian Beef Meatball Soup (Sayur Sop Baso Sapi)

Ingredients:

  • 250 grams beef meatballs
  • 1 large carrot
  • 1 large potato
  • 5 green beans
  • 2 stalks celery (daun sop)
  • 1 stalk scallion (daun bawang)
  • A small handful of cauliflower florets
  • Sufficient water
  • 3 cloves garlic
  • 1/2 teaspoon ground pepper
  • Salt, to taste
  • Sugar, to taste

Instructions:

  1. Prepare the Vegetables: Begin by washing and cutting all the vegetables into bite-sized pieces. Set them aside to drain.

  2. Sauté the Garlic: Peel and finely chop the garlic cloves. In a pot, heat a little oil and sauté the garlic until fragrant and golden brown.

  3. Cook the Soup Base: Add enough water to the pot to create your desired soup consistency. Once the water is boiling, add the beef meatballs and cook until they float to the surface.

  4. Add the Vegetables: Stir in the pre-cut vegetables and cook until they are tender. This should take about 5-10 minutes depending on the size of your vegetable pieces.

  5. Season the Soup: Add the chopped celery and scallions, followed by the ground pepper, salt, and a pinch of sugar. Adjust the seasoning to your taste.

  6. Finish and Serve: Taste the soup and make any final adjustments to the seasoning. Serve the soup hot, garnished with additional scallions or celery if desired.

Enjoy this comforting and flavorful Indonesian beef meatball soup, perfect for warming up on a chilly day!
