Sate Sapi Bumbu Kacang Recipe

Ingredients:

  • Beef: 2 kg, cut into small pieces
  • Tamarind: 100 g, dissolved in water
  • Salt: 1 tablespoon
  • Chicken Bouillon Powder: 2 packets
  • Pepper: 1 teaspoon, ground
  • Oil for brushing: Mixed with finely minced garlic and shallots
  • Ginger: 1 piece, crushed
  • Galangal: 1 piece, crushed
  • Lemongrass: 1 stalk, bruised
  • Peanut Sauce:
    • Peanuts: 500 g, roasted and ground

Instructions:

  1. Prepare the Beef:

    • Begin by cutting the beef into small, uniform pieces. Rinse the beef thoroughly under cold water and drain well.
  2. Marinate the Beef:

    • In a large bowl, combine the tamarind water with salt, chicken bouillon powder, and ground pepper. Add the crushed ginger, galangal, and bruised lemongrass to the mixture.
    • Place the beef pieces into the marinade, ensuring they are well coated. Let the beef marinate for at least 1 hour, or preferably overnight, to allow the flavors to fully infuse.
  3. Cook the Beef:

    • Transfer the marinated beef to a large pot and add enough water to cover the meat. Bring to a boil over medium heat.
    • Reduce the heat and simmer for about 1 hour, or until the beef is tender and cooked through. The slow cooking process helps to ensure that the beef will be perfectly tender when grilled.
  4. Prepare the Skewers:

    • Remove the cooked beef from the pot and drain well. Thread the beef pieces onto skewers, ensuring they are evenly spaced.
  5. Grill the Sate:

    • Preheat your grill to medium-high heat. Brush the grill grates with oil to prevent sticking.
    • Place the skewers on the grill and cook for 5-7 minutes on each side, or until the beef is nicely charred and cooked through. While grilling, occasionally brush the beef with the oil mixture for added flavor.
  6. Prepare the Peanut Sauce:

    • While the beef is grilling, prepare the peanut sauce. In a bowl, mix the ground peanuts with a little water to achieve a smooth, creamy consistency. You can adjust the thickness of the sauce by adding more water if needed.
  7. Serve:

    • Once the beef is grilled to perfection, remove it from the grill and serve it hot. Dip the skewers into the peanut sauce, or drizzle the sauce over the top.
