Ingredients

For the Beef Marinade:

  • 1/2 kg beef, cut into cubes
  • 10 tamarind pods
  • 5 shallots
  • 1 teaspoon salt
  • 10 tablespoons sweet soy sauce
  • 3 bay leaves
  • 2 stalks lemongrass
  • Cooking oil (as needed)

For the Peanut Sauce:

  • 1/2 cup roasted peanuts
  • 4 shallots
  • 3 cloves garlic
  • 1 stalk green onion
  • 1 small tomato
  • 3 red curly chilies
  • 3 fried candlenuts
  • 1/2 teaspoon shrimp paste
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon palm sugar (add white sugar and extra soy sauce if a sweeter taste is preferred)
  • 3 Marie biscuits or crackers (for thickening the sauce)
  • Salt to taste

For the Pickle:

  • 1 small cucumber, diced (seeds removed)
  • 1 small carrot, diced (optional, if available)
  • 3 shallots, coarsely sliced
  • 4 red bird’s eye chilies, coarsely sliced
  • 2 tablespoons vinegar
  • 1/2 teaspoon salt

Instructions

  1. Marinate the Beef:

    • Start by cutting the beef into bite-sized cubes. Do not wash the beef; ensure it is clean.
    • Place the beef cubes in a bowl. Add tamarind pods and salt. Mix thoroughly and let it sit for a few minutes. The tamarind helps tenderize the meat and adds flavor.
  2. Prepare the Peanut Sauce:

    • Heat some oil in a pan and fry the shallots until golden brown. Remove and set aside.
    • In the same pan, fry the garlic until fragrant. Remove and set aside with the shallots.
    • Blend the roasted peanuts, fried shallots, fried garlic, green onion, tomato, red chilies, candlenuts, and shrimp paste until smooth.
    • Pour the blended mixture into a pan. Add water as needed and stir to combine.
    • Crush the Marie biscuits or crackers and add them to the sauce for thickness. Add bay leaves and lemongrass. Cook and stir until the sauce thickens. Adjust seasoning with salt and sugar to taste. Remove from heat.
  3. Skewer and Grill the Beef:

    • Thread the marinated beef cubes onto skewers. Use 5 pieces of beef per skewer.
    • Brush the skewers with oil and grill them over medium heat until they are halfway cooked.
    • While grilling, brush some of the peanut sauce over the skewers, allowing the flavors to meld with the meat.
  4. Finish Grilling:

    • Continue grilling the skewers until the beef is fully cooked and slightly charred. Occasionally brush with more peanut sauce for added flavor.
  5. Prepare the Pickle:

    • In a bowl, combine diced cucumber, diced carrot (if using), coarsely sliced shallots, and coarsely sliced bird’s eye chilies.
    • Add vinegar and salt. Mix well and let it sit for at least 10 minutes to allow the flavors to meld.
  6. Serve:

    • Arrange the grilled beef skewers on a serving platter. Serve with extra peanut sauce on the side and the cucumber-carrot pickle.
