Pastel Tutup Daging Sapi (Indonesian Shepherd’s Pie with Beef)

Ingredients:

  • 3 medium potatoes (steamed and mashed)
  • 250 grams ground beef (finely chopped while frozen, then washed)
  • 3 oyster mushrooms (finely chopped)
  • 3 broccoli florets (finely chopped)
  • Scallions (finely chopped, to taste)
  • 1 egg (separate the white and yolk)
  • Grated cheese (to taste)
  • Salt (to taste)
  • Parsley flakes (optional, for garnish)

Spice Blend:

  • 2 shallots (thinly sliced)
  • 1 garlic clove (thinly sliced)
  • 1 bay leaf

Instructions:

  1. Prepare the Potato Mixture:

    • Combine the mashed potatoes with the egg white. Mix until well incorporated and set aside.
  2. Cook the Beef Filling:

    • Heat a bit of oil in a pan over medium heat.
    • Sauté the sliced shallots, garlic, and bay leaf until fragrant.
    • Add the ground beef, oyster mushrooms, broccoli, scallions, and a pinch of salt. Stir well.
    • Pour in a little water and cook until the water evaporates and the mixture is well combined. Remove from heat.
  3. Assemble the Pastel Tutup:

    • Prepare three aluminum foil containers or any small baking dishes.
    • Spoon a layer of the potato mixture into the bottom of each container, spreading it evenly.
    • Add a layer of the beef mixture on top of the potato layer.
    • Cover the beef mixture with another layer of the potato mixture.
    • Brush the top layer with the egg yolk.
    • Sprinkle grated cheese over the top.
  4. Steam and Serve:

    • Steam the assembled pastel tutup in a steamer for about 30 minutes.
    • Once done, remove from the steamer and let it cool slightly.
    • Garnish with parsley flakes, if desired.
