Sate Sapi tanpa Arang (Grilled Beef Skewers Without Charcoal) Recipe

Sate Sapi tanpa Arang is an Indonesian-style beef skewer dish made without the need for traditional charcoal grilling. Using a versatile Happy Call pan, this recipe creates tender and flavorful skewers with an aromatic spice blend. Serve with a spicy and tangy sambal kecap for an authentic touch.

Ingredients:

  • For the Beef Skewers:

    • 500 grams of beef with some fat (e.g., sirloin or tenderloin)
    • 6 shallots
    • 2 cloves of garlic
    • 1 tablespoon coriander seeds
    • 1 thumb-sized piece of ginger
    • 1 thumb-sized piece of galangal
    • Brown sugar to taste
    • Salt to taste
    • Black pepper to taste
    • Sweet soy sauce (kecap manis) to taste
    • Tamarind water (air asam jawa) to taste
    • Papaya leaves (optional, for marinating)
    • Skewers (wooden or metal)
  • For the Sambal Kecap:

    • 1 tomato, finely diced
    • 5 red bird’s eye chilies, thinly sliced
    • 1 shallot, thinly sliced
    • 1 kaffir lime (jeruk purut), cut into halves
    • Black pepper to taste
    • Sweet soy sauce (kecap manis) to taste

Instructions:

  1. Prepare the Beef:

    • Begin by tenderizing the beef. Wrap it with papaya leaves and let it rest for 30 minutes. This will help soften the meat. After 30 minutes, remove the papaya leaves and rinse the beef thoroughly.
  2. Make the Spice Paste:

    • In a blender, combine the shallots, garlic, coriander seeds, ginger, and galangal. Blend until you have a smooth paste. This spice paste is the foundation of your flavor.
  3. Marinate the Beef:

    • Cut the beef into small cubes, approximately 1-inch pieces. Coat the beef with the blended spice paste and add a generous amount of sweet soy sauce. Allow the beef to marinate for at least 15 minutes to absorb the flavors.
  4. Assemble the Skewers:

    • Thread the marinated beef pieces onto the skewers, with about 4-5 pieces per skewer.
  5. Cook the Skewers:

    • Heat your Happy Call pan on medium heat and lightly grease it with oil. Place the skewers on the pan and cook them, turning occasionally to ensure even cooking. Since this pan does not require covering, keep an eye on the skewers to achieve a nicely charred exterior without burning.
  6. Prepare the Sambal Kecap:

    • In a bowl, combine the diced tomato, sliced bird’s eye chilies, and thinly sliced shallot. Add black pepper and sweet soy sauce to taste. Squeeze in the juice from the kaffir lime halves to give a tangy kick to the sambal.
  7. Serve:

    • Once the beef skewers are cooked to your desired level of doneness, remove them from the pan and serve hot. Accompany with the sambal kecap on the side for dipping.

This Sate Sapi tanpa Arang is perfect for a delicious meal that brings the vibrant flavors of Indonesian cuisine right to your kitchen, all without the hassle of charcoal grilling. Enjoy your flavorful beef skewers with a zesty sambal for a complete and satisfying dish.
