Ayam Suwir Lada Hitam: A Flavorful Indonesian Chicken Dish

Ingredients:

  • 3 boneless chicken breasts
  • 6 shallots
  • 2 garlic cloves
  • 1 large onion
  • 2 cm galangal (sliced)
  • 1 stalk lemongrass
  • Black pepper to taste
  • Sweet soy sauce (kecap manis) to taste
  • 1 tablespoon chicken bouillon powder
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 200 ml water

Instructions:

  1. Prepare the Chicken: Start by boiling the chicken breasts in water for about 15 minutes until fully cooked. Once done, set aside to cool slightly, then shred into bite-sized pieces.

  2. Prepare the Aromatics: While the chicken is cooking, prepare the aromatics. Blend the shallots, garlic, and galangal together until smooth. Slice the onion and gently bruise the lemongrass with the side of a knife to release its flavors.

  3. Cook the Base: Heat a small amount of oil in a pan over medium heat. Add the blended shallot, garlic, and galangal mixture along with the sliced onion and bruised lemongrass. Sauté until the mixture is fragrant and the onions become translucent.

  4. Build the Flavor: Pour in the water, then add the sugar, salt, chicken bouillon powder, and sweet soy sauce. Stir to combine and let the mixture simmer briefly, allowing the flavors to meld together. Taste and adjust the seasoning as needed.

  5. Combine and Simmer: Add the shredded chicken to the pan and mix thoroughly to coat the chicken with the flavorful base. Sprinkle in the black pepper to taste. Continue cooking until the liquid has mostly evaporated and the chicken is well combined with the sauce.

  6. Serve: Once the chicken is coated and the sauce has thickened, remove the pan from heat. Serve the Ayam Suwir Lada Hitam hot with steamed rice or as part of a larger meal.
