Deliciously Chewy Indonesian Beef and Chicken Meatballs Recipe

Ingredients:

  • 500 grams chicken meat (frozen for 1 hour)
  • 200 grams beef meat (frozen for 1 hour)
  • 7 cloves garlic
  • 1 tablespoon fried shallots
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon beef bouillon powder
  • 2 whole eggs
  • 5 small ice cubes
  • 7 tablespoons heaping tapioca flour

Instructions:

  1. Prepare the Meat:

    • Begin by grinding the chicken and beef separately. Since beef is tougher to grind, process it longer until it becomes finely minced and smooth.
  2. Combine Ingredients:

    • Once the meat is ground, transfer it to a large bowl. Add the tapioca flour and mix thoroughly using a spatula. Taste the mixture, and if needed, adjust the salt. The raw mixture should have a strong flavor, as the taste can diminish during boiling.
  3. Chill the Mixture:

    • After mixing in the tapioca flour, cover the bowl and refrigerate the meat mixture for 30 minutes. If you find the mixture is still cold enough without chilling, you may skip this step.
  4. Shape the Meatballs:

    • Remove the mixture from the refrigerator. Prepare a pot of boiling water on the stove, reducing the heat to a simmer. Using your hands or a meatball scoop, shape the meat mixture into balls and carefully drop them into the simmering water. Cook until the meatballs are fully cooked and float to the surface.
  5. Final Touches:

    • Once all the meatballs are cooked, you can increase the heat to bring the water back to a boil if desired.

Tips:

  • Meat Ratio: You can adjust the ratio of chicken to beef according to your preference. A 1:1 ratio will give a balanced flavor, while ratios like 1:2 or 1:3 will make the beef flavor more prominent.
  • Tapioca Flour Measurement: For every 100 grams of meat, use 1 tablespoon of tapioca flour for the right consistency.
