Indonesian Chicken and Shrimp Siomay Dumplings

Siomay Ayam Udang

Ingredients:

  • 25 sheets wonton wrappers
  • 250 grams ground chicken (store-bought)
  • 250 grams peeled shrimp, chopped
  • 1 jicama or chayote, diced (I used chayote)
  • 1 large carrot, diced
  • 100 grams tapioca flour (I used sago flour)
  • 1 egg
  • 1 stalk green onion, chopped
  • 3 shallots, minced
  • 5 cloves garlic, minced
  • Sugar, salt, and ground pepper to taste
  • 1 tablespoon soy sauce
  • 2 tablespoons sesame oil
  • 1 large carrot, grated for topping (optional, I forgot to use this)

Steps:

  1. Prepare the Filling:

    • In a large mixing bowl, combine ground chicken, chopped shrimp, diced chayote, diced carrot, chopped green onion, minced shallots, and minced garlic. Mix well until thoroughly combined.
  2. Incorporate the Tapioca Flour:

    • Add the tapioca flour into the mixture and stir until evenly distributed.
  3. Add the Egg:

    • Crack the egg into the mixture and mix well to incorporate.
  4. Season the Mixture:

    • Add sugar, salt, ground pepper, soy sauce, and sesame oil to the mixture. Stir until all ingredients are well combined. If the mixture seems too soft, add a bit more tapioca flour to reach the desired consistency.
  5. Prepare the Wonton Wrappers:

    • Take one wonton wrapper and place a heaping tablespoon of the siomay filling in the center. Fold the sides of the wrapper around the filling, gently pleating and pressing to seal. You can place the wrapped siomay directly onto a greased steamer tray or use greased muffin molds.
  6. Top with Grated Carrot (Optional):

    • If desired, top each siomay with a pinch of grated carrot for added color and texture.
  7. Steam the Siomay:

    • Arrange the siomay in the steamer, ensuring they are not touching each other. Steam over medium heat for about 30 minutes or until fully cooked.
  8. Serve:

    • Once cooked, remove the siomay from the steamer and serve hot. Siomay is delicious when paired with your favorite chili sauce or peanut sauce.
