Indonesian Chicken Dumplings with Peanut Sauce
Ingredients:
- 250 grams boneless chicken breast
- Instant spring roll wrappers
- 150 grams all-purpose flour
- 100 grams tapioca flour
- 4 cloves garlic
- 1/2 tablespoon ground white pepper
- 1 sachet of chicken seasoning (e.g., Royco)
- Peanut Sauce:
- 250 grams peanuts
- 200 grams palm sugar (gula merah)
- 1 teaspoon chicken seasoning (Royco)
- 1 tablespoon granulated sugar
- Red chilies, to taste
- Cornstarch slurry (for thickening)
- Soy sauce
- Accompaniments:
- Chinese cabbage (gubis)
- Quail eggs
- Firm tofu
Instructions:

Prepare the Chicken Filling:
- In a blender, combine boneless chicken breast, garlic cloves, ground white pepper, and chicken seasoning. Blend until smooth, adding ice cubes to keep the mixture cold.
- Transfer the chicken mixture to a mixing bowl. Add all-purpose flour and tapioca flour. Mix until well combined.

Assemble the Dumplings:
- Take one sheet of spring roll wrapper. Place a portion of the chicken filling in the center. Shape the dumpling according to your preference. Repeat until all filling is used.
- Steam the dumplings for about 20 minutes or until cooked through. Steam together with accompaniments such as Chinese cabbage (gubis) and diced tofu.

- Roll the Chinese cabbage (gubis) and secure with toothpicks. Cut the tofu into small cubes. Boil quail eggs until cooked, then peel and set aside.

- In a blender, combine toasted peanuts, red chilies, and palm sugar. Blend until smooth, adding water as needed to achieve desired consistency.
- Transfer the peanut mixture to a saucepan. Cook over medium heat. Add granulated sugar, chicken seasoning, and adjust seasoning to taste. Thicken with cornstarch slurry until the sauce reaches desired thickness.

- Cut the steamed dumplings, Chinese cabbage rolls, tofu, and quail eggs into bite-sized pieces.
- Pour the warm peanut sauce over the prepared dumplings and accompaniments.
- Garnish with fried shallots and serve with soy sauce on the side.
