Delicious Chicken Noodles (Mie Ayam Lezat)
Ingredients:
For the Broth:
- 2 liters clean water
- 1/4 kg chicken bones (optional, replace with 1 ounce shrimp for seafood twist)
- 1/2 tsp seasoning powder (optional, replace with sugar)
- Salt to taste
Broth Seasoning Paste:
- 2 cloves garlic
- 1/2 thumb-sized ginger
- 1/2 thumb-sized turmeric
- 1 candlenut
- Salt to taste
For the Chicken Topping:
- 1/4 kg chicken meat and skin, diced and washed
- 7-10 tbsp sweet soy sauce
- 3 glasses clean water
- 1 pandan leaf, thinly sliced for garnish
Chicken Topping Seasoning Paste:
- 4 shallots
- 3 cloves garlic
- 3 kaffir lime leaves
- 1 thumb-sized galangal
- 1 thumb-sized turmeric
- 1 thumb-sized ginger
- 1/2 thumb-sized lesser galangal
- 4 candlenuts
- Sugar and salt to taste
Additional Ingredients:
- 4 servings homemade egg noodles, cooked until tender
- Boiled green mustard greens
- Chili sauce to taste
Instructions:
1. Broth:
- Sauté the broth seasoning paste until fragrant. Add water and remaining broth ingredients. Simmer until cooked. Set aside.
2. Chicken Topping:
- Sauté the chicken topping seasoning paste until fragrant. Add chicken meat and skin, stir until cooked through. Pour in water and remaining topping ingredients. Simmer until fully cooked.
3. Serving:
- In a serving bowl, place a portion of cooked egg noodles. Pour in the broth, add the chicken topping, boiled mustard greens, and chili sauce.
