Indonesian Chicken Nuggets with Homemade Breadcrumbs

Title: Indonesian-Style Chicken Nuggets (Nuget Ayam)

Ingredients:

  • 1/2 kg chicken breast
  • 1 carrot (shredded)
  • 1 egg
  • 3 cloves shallots
  • 3 cloves garlic
  • 2 stalks celery
  • Nutmeg, black pepper, salt (to taste)
  • Breadcrumbs (for coating)

Instructions:

  1. Prepare the Chicken: Since I’m using a whole chicken, I fillet and grind it myself. For the grinding process, I use a blender without adding water. Ensure that the chicken is finely ground for a smooth texture.

  2. Sauté Aromatics: Thinly slice the shallots and garlic. Fry them until they are dry and crispy. Once done, crush them into a fine paste using a mortar and pestle or a food processor.

  3. Mix Ingredients: In a large bowl, combine the ground chicken with the shredded carrot, beaten egg, crushed shallots and garlic, and finely chopped celery. Season the mixture with nutmeg, black pepper, and salt to taste. Stir everything together until well mixed.

  4. Shape the Nuggets: Take small portions of the mixture and shape them into balls or elongated nuggets. Roll each nugget in breadcrumbs until evenly coated. If the nuggets lose their shape after coating, reshape them gently. To prevent sticking, use plastic wrap on one hand while shaping the nuggets.

  5. Steam the Nuggets: Arrange the nuggets on a steaming rack. Steam them for approximately 15 minutes, or until fully cooked.

  6. Serve: Allow the nuggets to cool slightly before serving. They are perfect as a snack or as part of a meal.
