Semur ABT (Ayam Bihun Tahu)
Ingredients:
- 1/2 kg chicken, cut into 6 pieces and fried
- 2 pieces tofu, sliced to your preference and fried until half cooked
- 5 shallots
- 2 cloves garlic
- 1 candlenut
- 1 cm ginger
- 1 onion, thinly sliced
- 1 tomato, cut into quarters
- Bird’s eye chilies, to taste
- 2 tbsp sweet soy sauce
- 1 bunch rice vermicelli, soaked briefly and drained
- Salt, pepper, and sugar, to taste
- 4 tbsp cooking oil
- Chopped scallions, to garnish
Instructions:

Prepare the Spice Paste: Blend shallots, garlic, ginger, bird’s eye chilies, and candlenut into a smooth paste.

Cook the Spice Paste: Heat cooking oil in a pan over medium heat. Add the blended spice paste and sauté until aromatic.

Sauté Onion: Add the sliced onion to the pan and continue to cook until the onion becomes translucent.

Simmer: Pour in enough water to cover the ingredients and bring to a boil.

Add Main Ingredients: Incorporate the fried chicken pieces and tofu, followed by the tomato quarters. Stir in the sweet soy sauce, salt, pepper, and sugar to taste.

Simmer and Season: Allow the mixture to simmer until the flavors meld and the sauce has thickened slightly. Adjust seasoning as needed.

Finish with Garnishes: Add the chopped scallions and rice vermicelli. Stir well to combine.

Serve: Check the seasoning one last time before serving. Garnish with additional scallions if desired.
