Soto Sapi Kuah Bening: Indonesian Clear Beef Soup Recipe
Ingredients:
- 300 grams beef (shank or brisket)
- 1000 ml water
- 2 medium carrots
- 1 medium daikon radish
- A bunch of celery
- 4 bay leaves
- Salt and pepper to taste
- Fried shallots for garnish

Prepare the Beef:
- Place the beef in a pot with water and bring to a boil over high heat. Let it boil for about 5-8 minutes to remove any blood and impurities.
- Discard the water, and rinse the beef under cold running water to ensure it’s clean.

Cook the Beef:
- Return the beef to the pot, add 1 liter of fresh water, and add the bay leaves.
- Bring to a boil, then reduce the heat and simmer until the beef is tender. Once cooked, cut the beef into bite-sized cubes.

Prepare the Vegetables:
- In a separate pot, boil the daikon radish pieces for about 5 minutes until they become slightly translucent. Drain and set aside.

Combine and Season:
- Add the radish and carrots to the pot with the beef. Tie the celery into a bundle and add it to the pot.
- Season with salt and pepper to taste, then continue simmering until the vegetables are tender.

- Serve the soup hot, garnished with fried shallots.
