Ingredients:

  • 5 cloves garlic
  • 9 shallots
  • 4 large red chilies
  • 4 candlenuts
  • 1/4 tsp coriander powder
  • 1/2 chicken, cut into cubes or filleted as desired

  • 1 tomato
  • Salt, to taste
  • Ground pepper, to taste
  • Royco seasoning, to taste
  • Soy sauce, to taste
  • Sugar, to taste
  • 1/2 cup instant coconut milk

Instructions:

  1. Rinse the chicken thoroughly, then cut into cubes or fillet according to your preference.

  2. Grind the garlic, shallots, red chilies, candlenuts, and coriander powder into a smooth paste.

  3. Heat a pan over medium heat and sauté the ground spices until fragrant. Add a little water if needed to prevent sticking.

  4. Add the chicken to the pan and stir-fry until it changes color and is well coated with the spice mixture.

  5. Pour in the instant coconut milk while continuously stirring to combine.
