Spicy Indonesian Lemongrass Tuna Stew

Indonesian Tuna Pindang (Sarden Pindang Tongkol)

Ingredients:

  • 8 pieces of fried tuna
  • 1 stalk lemongrass, bruised
  • 3 tablespoons tomato sauce
  • Salt, sugar, and seasoning to taste
  • Cooking oil
  • Water

Spice Paste:

  • 5 shallots
  • 4 cloves garlic
  • 2 candlenuts
  • 5 curly red chilies
  • 10 orange bird’s eye chilies
  • 1 very ripe tomato
  • 1 teaspoon coriander seeds
  • 1 teaspoon whole peppercorns

Instructions:

  1. Heat cooking oil in a medium heat pan. Sauté the spice paste until fragrant and the oil separates.

  2. Add the bruised lemongrass, stir until wilted.

  3. Pour in water and bring to a boil. Add salt, sugar, seasoning, and tomato sauce. Stir well.

  4. Add the fried tuna pieces. Cook until the spices are absorbed and the sauce thickens. Adjust seasoning to taste.

  5. Serve hot.
