Opor Ayam Tahu Recipe

This Opor Ayam Tahu is a delightful and aromatic Indonesian dish that combines tender chicken with tofu in a rich and flavorful coconut curry sauce. Perfect for a comforting meal, this recipe ensures each component is cooked to perfection and infused with a blend of traditional spices.

Ingredients:

  • 1 kg chicken (broiler), steamed
  • 5 pieces tofu, cut into triangles
  • 7 shallots
  • 5 cloves garlic
  • 6 candlenuts
  • 2 inches galangal
  • 1 inch turmeric root
  • 2 bay leaves
  • 1 stalk lemongrass
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground coriander
  • Salt, sugar, and mushroom broth granules to taste
  • 1 sachet instant coconut milk
  • Oil for sautéing

Instructions:

  1. Prepare the Chicken: Clean the chicken thoroughly and steam until fully cooked, ensuring no traces of blood remain. Steaming is especially useful for broiler chicken to remove excess fat and make the meat tender.

  2. Prepare the Tofu: Wash the tofu and briefly boil it to remove impurities. After boiling, fry the tofu until it develops a crispy outer layer.

  3. Make the Spice Paste: Blend the shallots, garlic, candlenuts, galangal, and turmeric root into a smooth paste. Heat oil in a pan and sauté the spice paste until it becomes fragrant and the raw smell disappears. Ensure the paste is fully cooked to avoid any raw aroma.

  4. Combine Ingredients: Add a small amount of water to the pan to release the flavors of the spice paste. Stir in the ground black pepper and ground coriander.

  5. Cook the Chicken: Add the steamed chicken to the pan and pour in enough water to cover the chicken. Allow the mixture to simmer until the water reduces slightly.

  6. Add Coconut Milk: Stir in the instant coconut milk, mixing well to incorporate. Ensure the heat is moderate to prevent the coconut milk from curdling.

  7. Add Tofu and Season: Gently add the fried tofu pieces to the pan. Season with salt, sugar, and a pinch of mushroom broth granules to taste. Stir to combine all the flavors.

  8. Final Touch: Let the dish simmer until all the flavors meld together and the sauce reaches your desired consistency.

  9. Serve: Once done, remove from heat and serve hot. Enjoy this dish with steamed rice or your favorite side.

Note: For the best flavor, make sure to sauté the spice paste until it is completely cooked to avoid any raw or unpleasant taste.

This Opor Ayam Tahu recipe will fill your kitchen with wonderful aromas and offer a comforting, flavorful meal that showcases the rich culinary traditions of Indonesia.
