Ingredients:

    • 1 cm ginger
    • 1 cm galangal
  • Additional Aromatics:
    • 1 bay leaf
    • 1 kunyit leaf (optional)
    • 3 kaffir lime leaves (optional)
    • 1 lemongrass stalk, bruised

Instructions:

  1. Prepare the Spice Paste:

    • Blend the red chilies, bird’s eye chilies, shallots, garlic, turmeric, ginger, and galangal into a smooth paste using a food processor or mortar and pestle. The paste should be aromatic and evenly blended.
  2. Sauté the Spice Paste:

    • In a large pot or deep skillet, heat a little oil over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.
  3. Add Aromatics:
