Ingredients:
- 500 grams chicken, cut into large pieces
- Ukep Seasoning:
- 4 kaffir lime leaves
- 2 bay leaves
- 1 stalk lemongrass, smashed
- 1 tsp ground coriander (slightly more if preferred)
- 1 tsp turmeric powder
- Galangal (thumb-sized piece, grated)
- Ginger (thumb-sized piece, grated)
- Salt and sugar to taste
- Water or coconut water (for boiling chicken with seasoning)
Instructions:

If storing in the refrigerator, remove excess broth; the leftover spices should suffice to prevent the broth from gelling when cold. Store in an airtight container.
