Telor Ceplok Tauco: A Savory Indonesian Delight

Ingredients:

  • 4 large eggs
  • 6 shallots, thinly sliced
  • 6 cloves garlic, thinly sliced
  • 1 tomato, chopped
  • 5 green chilies, sliced (or red chilies, if preferred)
  • 5 bird’s eye chilies, sliced (adjust to taste)
  • 4 tablespoons tauco (fermented soybean paste)
  • 1 tablespoon tomato sauce
  • Water, as needed
  • Sugar, to taste
  • Salt, to taste

Instructions:

  1. Prepare the Eggs: Begin by frying the eggs to your preferred doneness. Set aside once cooked.

  2. Sauté Aromatics: In a pan, heat a bit of oil over medium heat. Add the sliced shallots and garlic, cooking until fragrant and lightly golden.

  3. Add Chilies and Tomato: Incorporate the sliced green chilies, bird’s eye chilies, and chopped tomato into the pan. Stir and cook until the tomato begins to soften.

  4. Incorporate Tauco and Tomato Sauce: Stir in the tauco and mix thoroughly with the other ingredients. Add a sufficient amount of water to achieve your desired sauce consistency.

  5. Season the Sauce: Mix in the tomato sauce, and season with sugar and salt to taste. Allow the mixture to come to a gentle boil, letting the flavors meld together.

  6. Combine with Eggs: Gently place the fried eggs into the sauce, stirring carefully to ensure the eggs are well-coated with the sauce.

  7. Finish and Serve: Let the dish simmer for a few minutes to allow the flavors to blend. Adjust seasoning if necessary. Serve hot as a delicious side or main dish.

Enjoy this vibrant and flavorful Indonesian classic that pairs beautifully with steamed rice or as a component of a larger meal!
