Sate Sapi Buntel: Indonesian Grilled Beef Skewers

Ingredients:

  • 500 grams ground beef
  • 1 egg
  • 2 tablespoons sweet soy sauce (such as Bango)
  • 1 tablespoon palm sugar
  • 1/4 teaspoon fine salt
  • Cooking oil
  • Skewers
  • For the Spice Paste:
    • 3 cloves garlic
    • 2 candlenuts
    • 1 tablespoon ground coriander (mixed with water, strained to get the juice)
    • 1/2 tablespoon black pepper

Instructions:

  1. Prepare the Steamer:

    • Set up a steamer and bring the water to a boil, readying it for use.
  2. Make the Meat Mixture:

    • In a large mixing bowl, combine the ground beef with palm sugar, sweet soy sauce, egg, fine salt, and the spice paste ingredients. Mix thoroughly until well incorporated.
  3. Skewer the Meat:

    • Take a handful of the meat mixture and press it firmly onto each skewer. Ensure that the meat sticks well and is evenly distributed along the skewer. Repeat until all the meat mixture is used.
  4. Steam the Skewers:

    • Place the skewers in the steamer and steam for about 10 minutes. Once done, remove from the steamer.
  5. Grill the Skewers:

    • Brush the steamed skewers with a mixture of sweet soy sauce and a bit of cooking oil. Grill over charcoal until nicely charred and cooked through, turning occasionally to ensure even grilling.
