  • 5 salted eggs
  • 5 blocks of white tofu (mashed)
  • 1 package (200 ml) coconut milk (Kara brand)
  • Salt, to taste
  • Ground black pepper, to taste
  • Sugar, to taste
  • Flavor enhancer (optional), to taste
  • Cooking oil

For the Spice Paste:

  • 5 cloves garlic
  • 5 cloves shallots
  • 20 small chili peppers

For Wrapping:

  • Banana leaves
  • Bay leaves
  • 1 tomato (diced)
  • 5 whole chili peppers

Instructions:

  1. Prepare the Salted Eggs:

    • Carefully separate the egg whites from the yolks.
  2. Make the Spice Paste:

    • Blend or grind the garlic, shallots, and small chili peppers into a smooth paste.
  3. Cook the Spice Paste:

    • Heat a little oil in a pan over medium heat. Sauté the spice paste until fragrant.
  4. Prepare the Tofu Mixture:

    • Add the coconut milk to the pan with the sautéed spice paste. Stir in about 100 ml of water. Incorporate the mashed tofu and mix well.
    • Season with salt, black pepper, sugar, and optional flavor enhancer. Adjust the taste, keeping in mind that the salted egg yolks will add saltiness. Remove from heat.
  5. Combine Ingredients:

    • Gently fold the egg whites into the tofu mixture. Taste and adjust seasoning if necessary.
  6. Wrap the Botok:

    • Take a piece of banana leaf and place a bay leaf on it. Add a portion of the tofu mixture onto the leaf, followed by a salted egg yolk. Top with diced tomato and whole chili peppers.
    • Fold the banana leaf to enclose the mixture, securing it well.
  7. Steam the Botok:

    • Arrange the wrapped botok on a steaming rack. Steam over boiling water for about 15-20 minutes.
  8. Serve:

    • Remove from the steamer and let cool slightly before serving. Enjoy the botok warm, as a unique and savory dish that showcases the richness of Indonesian flavors.
