Soto Ayam Blitaran: A Delicious Indonesian Chicken Soup

Soto Ayam Blitaran is a beloved Indonesian chicken soup known for its aromatic spices and rich flavors. Ingredients

Soto Broth:

  • 1 liter water
  • Sugar (to taste)
  • Salt (to taste)
  • Chicken stock powder (to taste)
  • Oil (for sautéing the spices)
  • 3 stalks scallions, sliced into rounds
  • 5 kaffir lime leaves
  • 2 tomatoes, scored but left intact

Ground Spices for Broth:

  • 3 cloves garlic
  • 7 shallots
  • 2-inch piece of turmeric (fresh or 1 tablespoon turmeric powder)
  • 2-inch piece of ginger
  • 1/2 packet ground black pepper
  • 1/2 packet ground coriander

Additional Ingredients:

  • 1/2 kg chicken, cooked, fried, and shredded
  • 1/2 kg potatoes, peeled, thinly sliced, and fried
  • 2 boiled eggs
  • 100 grams bean sprouts

Soto Sambal (Steamed and Ground):

  • 2 large red chilies
  • 15 bird’s eye chilies
  • 1 clove garlic
  • 1 candle nut (or substitute with macadamia nuts)
  • Sugar (to taste)
  • Salt (to taste)

Instructions

  1. Prepare the Broth:

    • Heat oil in a large pot over medium heat. Sauté the ground spices (garlic, shallots, turmeric, ginger, black pepper, and coriander) until they are fragrant and fully cooked.
    • Pour in the water and bring it to a boil. Add the sliced scallions, kaffir lime leaves, and scored tomatoes to the pot.
    • Simmer the mixture until it reaches a rolling boil. Season with sugar, salt, and chicken stock powder to taste. Adjust the seasoning as needed.
  2. Make the Sambal:

    • Steam the red chilies, bird’s eye chilies, garlic, and candle nut until they are soft.
    • Once steamed, grind these ingredients together until smooth. Season with sugar and salt according to your taste preferences.
  3. Assemble the Soto:

    • In serving bowls, arrange the shredded chicken, fried potato slices, and bean sprouts. Ladle the hot broth over these ingredients.
    • Top with boiled eggs and a generous spoonful of sambal to add a flavorful kick.
  4. Serve:

    • Enjoy your Soto Ayam Blitaran hot, with extra sambal on the side for those who prefer an extra spicy kick. This dish is best served with steamed rice or as a standalone meal.

Notes

  • For an authentic touch, consider adding additional garnishes such as fried shallots or chopped fresh cilantro.
