Soto Ayam Recipe: A Delightful Indonesian Chicken Soup

Ingredients:

For the Chicken:

  • 1/4 chicken breast

For the Ground Spices:

  • 1 packet of soto seasoning (non-instant)
  • 4 cloves of garlic
  • 2 cloves of shallots
  • 2 medium-sized kaffir lime leaves
  • Pepper to taste (either whole or ground)
  • 1 piece of ginger (approximately 2cm)
  • A pinch of cumin
  • A pinch of coriander

For the Coarsely Crushed Spices:

  • 1 bay leaf
  • 1 stalk of lemongrass (bruised)
  • 1 piece of galangal (approximately 2cm, bruised)

Other Ingredients:

  • 1 medium-sized green tomato
  • Water as needed
  • 1 packet of Royco beef seasoning (optional)
  • Granulated sugar to taste
  • 1 green onion (optional)

Instructions:

  1. Prepare the Chicken:

    • Boil the chicken breast for approximately 15 minutes. Drain and set aside.
    • Lightly fry the chicken just to dry the texture of the meat. Set aside.
  2. Prepare the Ground Spices:

    • In a food processor or mortar and pestle, grind the soto seasoning packet, pepper, kaffir lime leaves, cumin, coriander, 4 cloves of garlic, 2 cloves of shallots, and ginger until smooth.
  3. Prepare the Coarsely Crushed Spices:

    • Coarsely crush 2 cloves of garlic.
    • Bruise the galangal and lemongrass stalk.
  4. Sauté the Spices:

    • Heat some oil in a pan. Add the ground spices and sauté until fragrant.
    • Add the bruised galangal and lemongrass, followed by the bay leaf. Sauté until the spices release a distinctive aroma.
  5. Combine and Cook:

    • Add a little water to the pan to prevent the spices from burning.
    • Transfer the sautéed spices to the pot with the chicken broth.
    • Cut the green tomato into quarters and add to the pot.
    • If desired, add the Royco beef seasoning and granulated sugar to taste.
    • Check the seasoning and adjust as necessary.
  6. Finishing Touches:

    • Thinly slice the green onion and add to the soup.
    • Serve the Soto Ayam hot, ensuring it has a savory and slightly tangy taste typical of soto.

Notes:

Soto Ayam is best enjoyed with a side of rice and a squeeze of lime. Its rich and fragrant broth, combined with tender chicken pieces, makes for a comforting and hearty meal. Adjust the seasoning to suit your preference, and enjoy this classic Indonesian dish!
