Ayam Goreng Kecap (Indonesian Sweet Soy Sauce Fried Chicken)
Ingredients:
- 1/2 chicken, cut into pieces
- 1/2 onion, sliced lengthwise
- 2 cm ginger, smashed
- 2 red chilies, sliced diagonally
- 2 cloves garlic, finely minced
- 1 stalk green onion, sliced
- 1/2 teaspoon sugar
- Salt and pepper to taste
- 175 ml water (or as needed)
- Cooking oil for frying
- Soy sauce (kecap manis) to taste

Prepare the Chicken:
- Rub the chicken pieces with lime juice and salt. Massage thoroughly, then rinse well under cold water.
- Season the chicken with salt and pepper. For a quicker preparation, you can skip the marinating step and proceed directly to frying, but make sure to cut the chicken into smaller pieces for even cooking.

Fry the Chicken:
- Heat enough cooking oil in a pan over medium heat. Fry the chicken pieces until they are lightly golden brown. Remove from the pan and set aside.

Make the Sauce:
- In the same pan, remove excess oil if necessary, leaving about 2 tablespoons for sautéing. Add the minced garlic and smashed ginger. Sauté until fragrant.
- Add the sliced onion and continue to sauté until the onions become translucent and aromatic.
- Stir in the sliced red chilies and cook for a minute.
- Return the fried chicken to the pan. Season with sugar, salt, and pepper. Pour in the soy sauce and add water. Stir well to coat the chicken with the sauce.

Simmer and Finish:
- Let the mixture simmer until the sauce thickens and coats the chicken nicely. Just before removing from heat, sprinkle in the sliced green onions and give it a final stir.
