Galantin Sapi Goreng: A Deliciously Savory Indonesian Beef Roll

Ingredients:

  • 300 grams ground beef
  • 50 grams breadcrumbs
  • 1 egg
  • Spice Mixture:
    • 3 cloves garlic
    • 1/2 teaspoon ground black pepper
    • 1/4 teaspoon ground nutmeg
    • 1/2 tablespoon sugar
    • Salt to taste

Instructions:

  1. Prepare the Mixture:

    • In a large mixing bowl, combine the ground beef with breadcrumbs and egg. Mix thoroughly until well incorporated.
    • For the spice mixture, finely mince the garlic cloves or use a garlic press. Add the minced garlic, ground black pepper, ground nutmeg, sugar, and salt to the beef mixture. Continue mixing until all ingredients are evenly distributed.
  2. Shape and Wrap:

    • Take a large piece of banana leaf and lightly grease it. Place the beef mixture onto the banana leaf and shape it into a compact roll.
    • Carefully fold the banana leaf around the beef mixture, creating a tight parcel. Secure the ends by folding them over or tying them with kitchen string if needed.
  3. Steam to Perfection:

    • Set up a steamer or a large pot with a steaming rack. Place the wrapped beef roll on the rack, ensuring it’s not directly touching the water.
    • Steam the beef roll for approximately 1 to 1.5 hours, or until it is fully cooked. You can check for doneness by inserting a skewer or toothpick into the center of the roll; it should come out clean and without any residual pinkness.
  4. Cool and Store:

    • Once cooked, carefully unwrap the banana leaf and allow the beef roll to cool slightly. Slice the roll into manageable pieces.
    • If you’re not using it immediately, you can store the slices in the freezer for later use. Alternatively, you can proceed to pan-fry or grill the slices until they are crispy and golden brown on the outside.
  5. Serve:
