Savory Indonesian Beef Soup
This hearty Indonesian Beef Soup, known as “Sop Daging Sapi,” is a comforting and flavorful dish that brings together tender beef, an array of vegetables, and aromatic spices. Perfect for a warming meal, it combines rich, savory flavors with a delightful blend of textures.
Ingredients:
- 500 grams beef shank, cut into small cubes
- 3 medium carrots, peeled and sliced
- 2 medium potatoes, peeled and diced
- 1 medium daikon radish, peeled and sliced
- 1 large tomato, chopped
- 2 stalks green onions, sliced
- 3 shallots, finely chopped
- 4 cloves garlic, minced
- 1/3 nutmeg, grated
- 1 teaspoon ground cinnamon
- 2/3 teaspoon cloves
- A small piece of ginger, peeled and sliced
- 2 bay leaves
- Salt, to taste
- Black pepper, to taste
Instructions:

Prepare the Beef: Related Articles- Rinse the beef cubes under cold water. Place them in a pot and bring to a boil. Cook briefly until impurities and foam rise to the surface. Discard the water and any foam.

Cook the Beef: - Fill the pot with fresh water, add the beef cubes, bay leaves, and ginger slices. Bring to a boil again, then reduce the heat and simmer until the beef is tender, about 1 to 1.5 hours.

Prepare the Spice Paste: - While the beef is cooking, blend the shallots, garlic, and grated nutmeg into a smooth paste. Heat a little oil in a pan over medium heat and sauté the paste until fragrant and slightly golden.

Add Spices: - Stir the spice paste into the pot with the beef. Add the cloves and ground cinnamon, mixing well.
 
- 
Incorporate Vegetables: - When the beef is almost tender, add the carrots, potatoes, and daikon radish. Season with salt and pepper to taste. Continue cooking until the vegetables are tender.

Finish the Soup: - Just before serving, add the chopped tomato and sliced green onions. Allow the soup to simmer for a few more minutes to blend the flavors.

Serve: - Ladle the soup into bowls and serve hot, garnished with additional green onions if desired.
