Savory Indonesian Beef Soup

This hearty Indonesian Beef Soup, known as “Sop Daging Sapi,” is a comforting and flavorful dish that brings together tender beef, an array of vegetables, and aromatic spices. Perfect for a warming meal, it combines rich, savory flavors with a delightful blend of textures.

Ingredients:

  • 500 grams beef shank, cut into small cubes
  • 3 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and diced
  • 1 medium daikon radish, peeled and sliced
  • 1 large tomato, chopped
  • 2 stalks green onions, sliced
  • 3 shallots, finely chopped
  • 4 cloves garlic, minced
  • 1/3 nutmeg, grated
  • 1 teaspoon ground cinnamon
  • 2/3 teaspoon cloves
  • A small piece of ginger, peeled and sliced
  • 2 bay leaves
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. Prepare the Beef:

    • Rinse the beef cubes under cold water. Place them in a pot and bring to a boil. Cook briefly until impurities and foam rise to the surface. Discard the water and any foam.
  2. Cook the Beef:

    • Fill the pot with fresh water, add the beef cubes, bay leaves, and ginger slices. Bring to a boil again, then reduce the heat and simmer until the beef is tender, about 1 to 1.5 hours.
  3. Prepare the Spice Paste:

    • While the beef is cooking, blend the shallots, garlic, and grated nutmeg into a smooth paste. Heat a little oil in a pan over medium heat and sauté the paste until fragrant and slightly golden.
  4. Add Spices:

    • Stir the spice paste into the pot with the beef. Add the cloves and ground cinnamon, mixing well.
  5. Incorporate Vegetables:

    • When the beef is almost tender, add the carrots, potatoes, and daikon radish. Season with salt and pepper to taste. Continue cooking until the vegetables are tender.
  6. Finish the Soup:

    • Just before serving, add the chopped tomato and sliced green onions. Allow the soup to simmer for a few more minutes to blend the flavors.
  7. Serve:

    • Ladle the soup into bowls and serve hot, garnished with additional green onions if desired.

This soup is best enjoyed with a side of steamed rice or crusty bread. Its rich flavors and hearty ingredients make it a perfect choice for a satisfying meal.
