Kalio Hati Sapi: A Rich and Flavorful Indonesian Beef Liver Stew

Ingredients:

  • 500 grams beef liver
  • 5 shallots
  • 4 cloves garlic
  • 5 candlenuts
  • 3 bird’s eye chilies (adjust to taste)
  • 1 small piece of ginger
  • 1 small piece of galangal
  • 2 bay leaves
  • 1 teaspoon ground black pepper
  • Salt, sugar, and mushroom seasoning to taste
  • 1 cup coconut milk
  • Water as needed

Instructions:

  1. Prepare the Beef Liver: Begin by thoroughly cleaning the beef liver. Place it in a pot and pour enough water to cover it. Bring the water to a boil, then discard the water to remove impurities. Refill the pot with fresh water, return to a boil, and cook until the liver is fully cooked and tender. Drain and let it cool. Once cooled, cut the liver into bite-sized pieces.

  2. Blend the Aromatics: In a blender, combine the shallots, garlic, candlenuts, bird’s eye chilies, ginger, and galangal. Blend until smooth, adding a little water if needed to help with blending.

  3. Sauté the Spices: Heat a generous amount of oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant and golden brown. Incorporate the bay leaves and cook for a few more minutes.

  4. Cook the Liver: Add the beef liver pieces to the pan, stirring well to coat them with the spice paste. Pour in enough water to cover the liver and bring it to a simmer. Cover the pan and cook until the flavors meld and the liquid reduces.

  5. Add Coconut Milk and Seasonings: Stir in the coconut milk, ground black pepper, salt, sugar, and a pinch of mushroom seasoning. Mix well and allow the stew to simmer, uncovered, until the sauce thickens and the liver is well-coated with the rich, aromatic sauce.

  6. Finish and Serve: Once the sauce has reduced to your desired consistency and the liver is fully flavored, remove the pan from heat. Serve hot with steamed rice or as part of a larger meal.

This Kalio Hati Sapi is a delightful Indonesian dish known for its deep, rich flavors and tender beef liver, making it a perfect addition to any meal. Enjoy this aromatic and satisfying dish that brings the essence of Indonesian cuisine to your table.
