Tongseng Sapi is a delightful Indonesian beef stew that combines tender pieces of beef with a fragrant blend of spices and vegetables. This hearty dish features a rich, coconut-based sauce that pairs perfectly with steamed rice. Here’s how to create this flavorful meal.

Ingredients:

  • 250 grams beef, simmered until tender, then cut into small pieces
  • 500 ml beef broth
  • 1/2 sachet instant coconut milk (small pack)
  • 3 bay leaves
  • 2 kaffir lime leaves, torn and stems removed
  • 1 stalk lemongrass (sereh)
  • 2 pieces galangal (lengkuas), crushed
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1/2 medium cabbage, thinly sliced or chopped to your preference
  • 1 stalk green onion, sliced
  • 5 red chili peppers (or to taste), sliced
  • 1 tomato, chopped
  • 2 carrots, cut into pieces or slices
  • Seasoning:
    • Mushroom seasoning powder, to taste
    • Salt, to taste
    • Sugar, to taste
    • A little oil for sautรฉing
Spice Paste:
  • 6 red curly chilies
  • 3 shallots
  • 2 cloves garlic
  • 2 candlenuts, toasted
  • 2 pieces turmeric (kunyit), peeled
  • 1 piece ginger, peeled

Instructions:

  1. Prepare the Beef: Begin by simmering the beef in water until tender. Reserve the broth and cut the beef into small pieces.

  2. Prepare the Spice Paste: In a blender or food processor, combine the red chilies, shallots, garlic, toasted candlenuts, turmeric, and ginger. Blend until you achieve a smooth paste.

  3. Sautรฉ the Aromatics: Heat a small amount of oil in a large pot or skillet over medium heat. Add the spice paste, lemongrass, galangal, bay leaves, and kaffir lime leaves. Sautรฉ until the mixture becomes fragrant and the spices are well-cooked.

  4. Add the Beef: Incorporate the cooked beef into the pot, along with the reserved beef broth. Stir well and bring to a boil.

  5. Simmer and Flavor: Once boiling, add the instant coconut milk, mushroom seasoning powder, salt, sugar, and sweet soy sauce. Stir to combine and allow the mixture to simmer until the liquid has reduced slightly.

  6. Add Vegetables: Add the carrots, cabbage, red chili peppers, and tomato. Cook for a few more minutes until the vegetables are tender and have absorbed the flavors.

  7. Finish and Serve: Stir in the sliced green onions and cook briefly. Taste and adjust seasoning if necessary. Remove from heat.

  8. Serve: Enjoy the Tongseng Sapi hot, served with steamed rice for a complete and satisfying meal.
