Spicy Indonesian Deviled Eggs (Telur Balado)
Ingredients:
- 6 hard-boiled eggs
- Spice Paste:
- 3 cloves garlic
- 8 shallots
- 10 red chilies
- 1-inch piece of ginger
- 1-inch piece of turmeric
- 3 candlenuts
- 3/4 teaspoon ground black pepper
- Salt to taste
- Palm sugar to taste
- Seasoning to taste
- Water as needed

- Begin by boiling the eggs until fully cooked. Once cooled, peel them and set aside.

- In a blender or food processor, combine garlic, shallots, red chilies, ginger, turmeric, and candlenuts. Blend until the mixture forms a smooth paste.

- Heat a generous amount of oil in a pan over medium heat. Add the spice paste and sautรฉ until fragrant and the oil starts to separate from the paste.

- Add a small amount of water (about one cup) to the pan with the spice paste. Stir in the palm sugar and seasoning to taste. Allow the mixture to simmer until the sugar dissolves and the sauce thickens slightly.

- Gently add the peeled hard-boiled eggs into the pan, ensuring they are well-coated with the spice mixture. Cook until the sauce has reduced and the eggs are fully flavored, stirring occasionally.
