Ayam Goreng Terasi: Indonesian Fried Chicken with Shrimp Paste

Ingredients:

  • 500 grams chicken, cut into small pieces
  • 5 stalks green onions, thinly sliced
  • 2 large red chilies, sliced diagonally
  • 5 bird’s eye chilies, sliced diagonally
  • 1 piece young ginger, thinly sliced
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon oyster sauce
  • 1 teaspoon shrimp paste, finely ground
  • Salt, to taste
  • Sugar, to taste
  • Seasoning, to taste
  • Cooking oil, for frying
  • 2 cups water

For the Spice Paste:

  • 5 cloves shallots
  • 4 cloves garlic
  • 1 tablespoon coriander seeds
  • 1 piece turmeric, peeled
  • Salt, to taste
  • Sugar, to taste
  • Seasoning, to taste

Instructions:

  1. Prepare the Chicken:

    • Rinse the chicken pieces thoroughly under cold water.
  2. Cook the Spice Paste:

    • In a blender or food processor, combine the shallots, garlic, coriander seeds, and turmeric. Blend until you achieve a smooth paste. If necessary, add a small amount of water to facilitate blending.
  3. Simmer the Chicken:

    • In a large pot, add the spice paste and 2 cups of water. Bring to a boil over medium heat. Once boiling, add the chicken pieces. Season with salt, sugar, and seasoning to taste. Stir to combine.
    • Reduce the heat and let it simmer for 15 minutes, allowing the chicken to absorb the flavors. Once the chicken is tender, remove it from the pot and let it drain.

    • In a separate pan, heat a small amount of oil over medium heat. Add the green onions, red chilies, bird’s eye chilies, and sliced ginger. Stir-fry until fragrant.
    • Stir in the oyster sauce, shrimp paste, salt, sugar, and seasoning. Add a splash of water if needed to create a flavorful sauce.
  6. Combine and Serve:

    • Add the fried chicken pieces to the pan with the stir-fried ingredients. Toss well to ensure the chicken is coated with the sauce and the flavors are evenly distributed.
