Pindang Bandeng (Indonesian Spicy Milkfish Stew)

Ingredients:

Medium-sized milkfish (bandeng) 3 fish (cut into pieces)
Fresh turmeric (sliced thinly) 1 thumb-sized piece
Fresh ginger (sliced thinly) 1 thumb-sized piece
Fresh galangal (sliced thinly) 1 thumb-sized piece
Shallots (sliced thinly) 10 shallots
Garlic (sliced thinly) 7 cloves
Medium-sized tomatoes (diced) 3 tomatoes
Bird’s eye chilies (optional) To taste
Tamarind paste (asam jawa) 1 packet
Bay leaves (daun salam) 5 leaves
Lemongrass stalks (cut into pieces) 2 stalks
Salt To taste
Seasoning powder (optional) To taste
Ground black pepper To taste
Sweet soy sauce (kecap manis) To taste
Water As needed
Cooking oil for sautéing As needed

Instructions:

  1. Prepare the Fish:
    Begin by thoroughly washing the milkfish (bandeng) that has been cut into pieces. Set it aside to drain.

  2. Sauté the Aromatics:
    In a pan, heat a small amount of oil over medium heat. Add the sliced turmeric, ginger, galangal, shallots, and garlic. Sauté them until they are fragrant and well-cooked.

  3. Add the Water and Fish:
    Once the aromatics are cooked, pour in a generous amount of water into the pan. Bring it to a boil before carefully adding the milkfish pieces. Stir gently to combine.

  4. Season the Dish:
    Add sweet soy sauce (kecap manis) to the mixture, then toss in the diced tomatoes and tamarind paste. Season with salt, seasoning powder (if using), and ground black pepper to taste. Stir to mix all the ingredients.

  5. Simmer Until Cooked:
    Add the bay leaves and lemongrass stalks to the pot, then cover it. Let the stew simmer until the fish is fully cooked and tender, absorbing all the delicious flavors.

  6. Serve and Enjoy:
    Once the fish is cooked through and the sauce is flavorful, remove the pot from heat. Serve the Pindang Bandeng while it’s still hot, and enjoy the mouth-watering, spicy aroma.
