Gulai Kakap Merah: A Flavorful Indonesian Fish Stew

Gulai Kakap Merah is a delectable Indonesian fish stew that brings together a harmonious blend of spices and creamy coconut milk, making it a comforting and rich dish perfect for any occasion. Here’s how to make this aromatic and savory stew:

Ingredients

  • 1 whole red snapper (approximately 1 kg), cut into two or as desired
  • 1 lime, juiced
  • 1 lemongrass stalk, bruised
  • 1 cm galangal
  • 2 pieces of tamarind slices (asam kandis)
  • 5 red chili peppers, or to taste
  • 300 ml thick coconut milk
  • 700 ml thin coconut milk (or more, depending on your preference)
  • A small amount of cooking oil for sautéing

Spices and Herbs:

  • 1 bay leaf
  • 3 kaffir lime leaves
  • 2 kaffir lime leaves, tied into a knot
  • 2 stalks of lemongrass, bruised

For the Spice Paste:

  • 5 large red chilies
  • 1 cm turmeric, roasted and peeled
  • 1 cm ginger
  • 1 teaspoon coriander seeds
  • 1 teaspoon black pepper
  • 10 shallots
  • 5 garlic cloves

Instructions

  1. Prepare the Fish:

    • Rinse the red snapper and rub it with lime juice. Let it marinate for about 15 minutes, then rinse and drain.
  2. Prepare the Spice Paste:

    • Blend or grind the red chilies, roasted turmeric, ginger, coriander seeds, black pepper, shallots, and garlic into a smooth paste.
  3. Cook the Spice Paste:

    • Heat a small amount of cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant and well-cooked.
  4. Add Coconut Milk and Spices:

    • Pour in the thin coconut milk and add the bay leaf, kaffir lime leaves, lemongrass, and galangal. Bring to a boil.
  5. Cook the Fish:

    • Add the red snapper pieces to the boiling mixture. Continue cooking until the fish is cooked through and the flavors are well combined.
  6. Finish with Thick Coconut Milk:

    • Stir in the thick coconut milk and cook gently until the stew is heated through. Avoid boiling vigorously to prevent the coconut milk from curdling. Taste and adjust seasoning as needed.
  7. Serve:
