Instructions:
-
Prepare the Chicken Mixture:
- Heat a pan over medium heat and add a little oil. Sauté the shallots, garlic, and ginger until they release their aromatic fragrance.
- Add the chicken cubes and cook until they turn white and are no longer pink.
- Season with salt, sugar, pepper, and sweet soy sauce. Stir well to ensure the chicken is evenly coated with the seasonings.
- Pour in a small amount of water to create a slight sauce and let it simmer until the chicken is fully cooked.
- Stir in the cornstarch slurry and cook until the sauce thickens. Adjust the seasoning if necessary. Set aside.

Prepare the Steaming Mold:
- Lightly grease a stainless steel bowl or mold to prevent sticking.
- Arrange the halved boiled egg slices at the bottom of the mold.
- Spoon the cooked chicken mixture around the egg slices.
- Pour the chicken sauce over the chicken mixture in the mold.

Assemble and Steam:
- Gently press the cooked, soft rice into the mold over the chicken mixture, packing it down to ensure it holds together.

-
Prepare the Broth:
- In a separate pot, bring the water to a boil. Add the crushed garlic, salt, sugar, and pepper.
- Stir in the sesame oil, if using. Let the broth simmer until it is well-flavored and adjust the seasoning to taste.
- Strain the broth if desired and keep warm.
-
Serve:
- Carefully remove the steamed Nasi Tim Ayam from the mold and place it on a serving dish.
- Serve with the warm broth, garnished with sliced scallions.
