Semur Tahu Tempe with Quail Eggs

Ingredients

Tempe (triangle-shaped, wrapped in banana leaf) 5 pieces
Tofu (square-shaped) 5 pieces
Quail eggs (boiled and peeled) 20 eggs
Palm sugar 1 small piece
Galangal (lightly crushed) 1 thumb-sized piece
Ginger (lightly crushed) 1 thumb-sized piece
Bay leaves (torn) 2 leaves
Kaffir lime leaves (torn) 3 leaves
Tomato 1 piece (optional, as garnish)
For the spice paste
Shallots 5 bulbs
Garlic 3 cloves
Candlenuts 3 nuts
Nutmeg 1/3 of a whole nut
Ground white pepper 1/2 teaspoon
Ground coriander 1 teaspoon
Salt To taste
Sweet soy sauce To taste
Oil For sautéing

Instructions

  1. Prepare the Spice Paste: Blend or grind the shallots, garlic, candlenuts, nutmeg, ground pepper, and ground coriander into a fine paste. This will serve as the main flavor base for the dish.

  2. Sauté the Spices: Heat oil in a large pan or wok over medium heat. Add the blended spice paste and sauté until fragrant, about 2-3 minutes. The aroma of the spices should be noticeable and delightful.

  3. Add the Aromatics: Once the spice paste is fragrant, add the crushed galangal, crushed ginger, bay leaves, and kaffir lime leaves. Stir and cook for an additional 1-2 minutes until the leaves soften and release their aromas.

  5. Season the Sauce: Add sweet soy sauce and salt to taste. Stir well and let the sauce come to a boil.

  6. Cook the Main Ingredients: Once the sauce is boiling, gently add the tofu, tempeh, and boiled quail eggs. Stir carefully to coat the tofu, tempeh, and eggs evenly with the sauce. Let the mixture simmer over low heat until the liquid reduces, and the tofu, tempeh, and eggs absorb the rich brown color of the sauce.

  7. Finishing Touches: Once the sauce has reduced and the dish has thickened to your liking, taste and adjust seasoning if necessary. Add the tomato at the last minute for a fresh, vibrant touch if desired.
