Indonesian Sweet Soy Chicken and Tofu Stew

Indonesian Chicken and Tofu Stew (Ayam Kecap/Semur)

Ingredients:

  • 4 pieces of chicken (thighs and drumsticks)
  • 6 chicken feet (optional)
  • 8 pieces of fried tofu
  • 1/2 large onion, thinly sliced
  • 1 tomato, finely sliced

Spices:

  • 1 tbsp minced garlic
  • 1 tbsp minced shallots
  • 1 small piece of ginger, minced
  • Sweet soy sauce (kecap manis), to taste
  • A dash of oyster sauce
  • Ground white pepper
  • Ground nutmeg

Instructions:

  1. Fry the Chicken and Tofu: Begin by frying the chicken and tofu until golden brown. Set aside once done.

  2. Sauté the Aromatics: In the same pan, sauté the minced garlic, shallots, and ginger until fragrant.

  3. Add Chicken and Tofu: Add the fried chicken and tofu into the pan. Pour in sweet soy sauce and a dash of oyster sauce. Stir well.

  4. Pour in Water: Add enough water to cover the chicken and tofu.

  5. Incorporate Onion and Tomato: Stir in the sliced onion and tomato.

  6. Seasoning: Season with ground white pepper and nutmeg according to taste. Stir everything together thoroughly.

  7. Simmer Until Flavorful: Allow the stew to simmer until the chicken and tofu absorb the flavors of the spices and sauce.

  8. Serve: Once cooked through and flavorful, serve the Indonesian Chicken and Tofu Stew hot.

  9. Optional Garnish: For added freshness, garnish with sliced green onions if desired.
