Spicy Rica Rica Chicken with Bird’s Eye Chili

Ingredients:

  • 500 grams chicken, cut into preferred pieces
  • 1 handful of red Bird’s Eye chilies (or Devil’s chilies)
  • 4 kaffir lime leaves
  • 2 stalks lemongrass, bruised
  • 5 shallots
  • 3 cloves garlic
  • Salt, sugar, seasoning powder, cooking oil, to taste
  • Turmeric, to taste
  • Water, as needed

Instructions:

  1. Prepare the Ingredients:

    • Grind together turmeric, chilies, shallots, and garlic into a smooth paste.
  2. Fry the Chicken:

    • Heat cooking oil in a pan and fry the chicken until golden brown. Set aside.
  3. Cook the Spices:

    • In the same pan, heat more oil and sauté the ground spice paste until fragrant. Add lemongrass and kaffir lime leaves. Stir until aromatic.
  4. Simmer the Dish:

    • Pour in a bit of water and let it come to a boil. Season with salt, sugar, and seasoning powder to taste.
  5. Combine and Cook:

    • Add the fried chicken into the spice mixture. Stir well until the chicken is well-coated and the sauce thickens.
  6. Serve:

    • Remove from heat and transfer to a serving dish. Serve hot.
