Semur Ayam Recipe
Ingredients
- Chicken (pre-boiled)
- Ginger – 1 segment, crushed
- Bird’s Eye Chilies – 10, chopped
- Onion – 1, sliced
- Soup Seasoning
- Sweet Soy Sauce
- Flavor Enhancer
- White Pepper – ground
- Black Pepper – ground
Spice Paste:
- Garlic – 4 cloves
- Shallots – 5
- Candlenuts – 4

Prepare the Chicken:
Lightly fry the pre-boiled chicken until slightly golden. It doesn’t need to be fully crispy, just a quick fry to seal in the flavors. -
Sauté the Spice Paste:
Using a food processor or mortar and pestle, grind the garlic, shallots, and candlenuts into a fine paste. Heat a little oil in a pan and sauté this paste until fragrant. -
Add Seasonings:
Into the pan with the spice paste, add the soup seasoning, crushed ginger, and chopped bird’s eye chilies. Sauté for a few minutes until the spices release their aromas. -
Combine the Ingredients:
Add the lightly fried chicken to the pan, stirring well to coat the chicken with the spice mixture. Pour in the sweet soy sauce and continue to stir until the chicken is evenly coated. -
Season the Dish:
Sprinkle in the white pepper, black pepper, and flavor enhancer. Add the sliced onion and let the mixture simmer until the onions are tender and the sauce has thickened slightly. -
Taste and Adjust:
Let the semur ayam come to a gentle boil. Taste the sauce and adjust the seasoning if needed. -
Serve:
Once the sauce has reached your desired consistency and the flavors have melded together beautifully, your semur ayam is ready to be enjoyed. Serve hot with steamed rice.
