Semur Telur Kentang Tahu: A Hearty Indonesian Stew
Ingredients:
- 4 large eggs
- 3 medium potatoes
- 2 blocks of tofu
- 4 shallots
- 2 cloves of garlic
- 4 chili peppers (optional)
- 1 tomato
- Sweet soy sauce (approx. 1 sachet, or to taste)
- Sugar, salt (to taste)
- Water (as needed)
- Cooking oil
Instructions:
-
Prepare Ingredients: Start by cutting the tofu and potatoes into bite-sized pieces. Slice the shallots, garlic, chili peppers (if using), and tomato. Set these aside for later use.
-
Fry the Tofu and Eggs:
- Heat oil in a frying pan over medium heat.
- Fry the tofu pieces until they are lightly browned and halfway cooked. Remove from the pan and set aside.
- In the same pan, fry the eggs until they are cooked through, then cut them into halves or thirds.
-
Sauté Aromatics:
- In a separate large pot, heat a bit more oil over medium heat.
- Add the sliced shallots, garlic, chili peppers, and tomato. Sauté until they are fragrant and the shallots are translucent.
-
Cook the Potatoes:
- Add the potato pieces to the pot and stir well.
- Pour in enough water to cover the potatoes. Bring the mixture to a boil and cook until the potatoes are tender.
-
Combine Ingredients:
- Add the pre-fried tofu and eggs to the pot.
- Season with sweet soy sauce, sugar, and salt according to your taste preferences.
- Allow the stew to simmer until all ingredients are well combined and the flavors meld together. Adjust seasoning if needed.
-
Optional Thickening:
- If you prefer a thicker sauce, dissolve 1 tablespoon of cornstarch in a small amount of water. Stir this mixture into the stew, and cook until the sauce has thickened.
-
Serve:
- Once everything is well-cooked and the flavors are balanced, remove from heat.
- Serve hot, and enjoy this comforting Indonesian dish with steamed rice or as a hearty standalone meal.
Notes:
- You can substitute fried eggs with boiled eggs or quail eggs for variety.
- Feel free to add a seasoning enhancer if desired.
- Adjust the amount of sweet soy sauce based on your taste preference for sweetness and depth of flavor.
This savory stew brings together the heartiness of potatoes, the delicate texture of tofu, and the richness of eggs in a deliciously seasoned sauce, making it a perfect dish for any meal.
